Pick a Perfect Pepper

Stuffed Pepper Recipe

6 medium peppers
1 jar marinara sauce
3/4 lb. Italian turkey sausage
3/4 cup cooked brown rice
1/2 cup crumbled feta cheese
1/2 cup chopped onions
1/4 cup chopped Roma tomatoes
1/4 cup minced fresh parsley
2 Tbsp slice ripe olives
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp Italian seasoning
1/4 tsp crushed red pepper flakes

Cut tops off peppers; chop tops to use in peppers. Discard stems and seeds; set pepper cups aside.  Fry sausage, crumble, and pour off excess fat. Combine 2 cups marinara sauce, chopped peppers,  and the remaining ingredients. Spoon into pepper cups, and top with extra sauce.  Bake in casserole dish for 30 minutes at 350 degrees or until heated thoroughly. 

It is officially pepper season! In order to capture the beauty of these colorful vegetables, I borrowed a green mixing bowl from my mother who owns a wide collection of unique treasures. The vibrance and hues of these gifts from nature remind us to display our true colors. Stop by your local farmers' market and put a pepper on your plate.
